Fennel Yuzu Kombucha and Hibiscus Sumac Kombucha

Made in a home kitchen these ferments contain the following ingredients: SCOBY (symbiotic culture of bacteria and yeast), sencha green tea, black tea, unbleached sugar, raw honey, yuzu juice extract, fennel, hibiscus, sumac.

With hand blown glass sculpture, latex tubing, latex sheeting, plant matter, SCOBY, Kombucha brew.

At the Headlands Center for the Arts auction, "Microbial Matrix – A Fermented Offering" was an art activation designed to initiate and immerse guests into the space. This offering featured Fennel Yuzu Kombucha, a fermented drink crafted to illustrate and reflect the essence of the place. By engaging the guests' senses, this drink aimed to negate their passivity and fully activate their experience of the evening. As they sipped the kombucha, the unique flavors of fennel and yuzu served as a sensory bridge, connecting them to the environment and heightening their awareness of the artistic atmosphere. This activation encouraged guests to become active participants, fostering a deeper connection and engagement with the event and its surroundings.
